Also known as the “Gold of the Incas,” quinoa has been a cultivated staple in the Andes region of South America for thousands of years. The Incan Empire believed it to be a sacred food and even referred to it as the “mother of all grains.” This important crop was highly valued by their ancient warriors who appreciated its ability to support healthy energy levels and good overall health in times of need, such as before a battle.

Ingredients:
- 3/4 cup Health Ranger Select Organic Quinoa, (rinsed)
- 1.5 cup water
- 1 can unsalted organic black beans, (rinsed and drained)
- 1 cup frozen/thawed organic corn
- 1/2 medium-sized, organic red bell pepper, (seeded and chopped)
- 1 cup Health Ranger Select Organic Freeze-Dried Mango Pieces
- 1/4 cup organic onion, (finely chopped)
- ⅓ cup organic cilantro (chopped)
- Optional: Avocado
Dressing:- 3 Tbsp. organic extra-virgin olive oil
- 2 Tbsp. fresh organic lime juice
- 1 tsp. Health Ranger Select Premium Raw Manuka Honey MGO 514+
- 2 tsp. organic chili powder
- ½ tsp. ground organic cumin
- 1 tsp. Health Ranger Select Pink Himalayan Salt (Fine Ground)
- 1/4 tsp. Health Ranger Organic Ground Black Pepper
Instructions:- Combine the quinoa and water in a medium pot. Bring to a boil, cover and reduce the heat. Let it simmer for 15 minutes.
- Remove from heat and scoop it into a salad bowl. Let it cool while preparing the other ingredients.
- Chop up the vegetables. Mix into the quinoa.
- Whisk the dressing ingredients together.
- Drizzle over the mixture and toss.
- Refrigerate. Enjoy while chilled.

Cooking Instructions: Soak quinoa in cold water for a few minutes, until outer shell is removed. Strain and rinse. Boil 2 cups of liquid (water or broth) for every cup of quinoa. Add quinoa, cover and reduce heat to simmer. Cook for 10-15 minutes. Fluff with fork. |
